Debt Collector 'Cask Aged' 2-Year Moonshine (50% ABV) is an American-style ‘young’ whisky, aged for two years in charred virgin American oak. Made and matured in London with a mash of mostly corn, plus barley and rye and distilled twice in our copper pot still.
'Debt Collector' is inspired by deep south blues rock music and prohibition times. In the process of making our whisky we have bottled and released the spirit in stages as it ages, from the Unaged Moonshine (right before barreling) to the 1 year cask aged moonshine and to this 2 year cask aged moonshine. We love sharing the spirit as it ages, and the fact that each stage can be enjoyed and appreciated.
On the nose, there is a delightful blend of caramel and vanilla, with an initial earthy woodiness that evolves into a light, caramelised sweetness. As the flavour unfolds, pronounced oak undertones and a lingering spiciness bring hints of winter cloves and a touch of salted caramel, making each sip an inviting and memorable experience.

Palate: Strong oak up front due to its young maturation followed by light caramel and toasty flavours followed by a spicey finish.
