At Doghouse Distillery we make Renegade Gin we use a combination of pot boiling and vapour infusion for the extraction of botanical oils. ⚗
Our vapour infuser, we call “R2-D2” (shown here), intercepts vapours that have left our pot still on their way to being re-liquified. The vapour passes through the botanicals in the infuser basket taking delicate flavors and aromatics on their merry way to the end spirit. It is all a fine balance for consistency purposes ⚖😊
Our next spirit soon to be released also utilises some vapour infusion…keep an eye out for this!
